When I think of comfort food I think Khichdi. This is a dish I usually make when I feel like eating a warm, wholesome meal. Super simple yet extremely satisfying. It is soothing, delicious and light on your tummy.

Khichidi (Rice and Lentil Porridge)

      When I think of comfort food I think Khichdi. This is a dish I usually make when I feel like eating a warm, wholesome meal. Super simple yet extremely satisfying. It is soothing, delicious and light on your tummy.

      Ingredients

      For Tempering (Tadka)

      • 3 Tablespoons Ghee
      • 1 Tablespoon Cumin seeds
      • 1 Bay leaf
      • 2 Slit Green Chillies
      • 6 to 8 Curry leaves
      • 1/4 Teaspoon Asafetida

      For Instant pot

      • 1 Cup White rice
      • 1 Cup Moong Dhal (Yellow Lentils)
      • 4 1/2 Cups Water
      • Salt To Taste
      • 1/4 Teaspoon Turmeric powder

      For Garnish

      • A handfull chopped cilantro
      • 1 Teaspoon Ghee

      Method

      Instant Pot

      • 1)

        Add the rice and dhal, water and salt in the instant pot and let it cook with closed pressure valve for 9 minutes

      • 2)

        Let the pressure release by itself. Do not force it out

      • 3)

        Once the pressure releases, open the instant pot and mix the rice and lentils

      Seasoning the Khichdi

      • 1)

        Add the Ghee and the ‘for tempering’ ingredients

      • 2)

        When the cumin seeds get aromatic pour the flavored ghee in cooked rice and dhal and mix nicely

      • 3)

        Garnish with Ghee and cilantro

      • 4)

        Enjoy when its hot
