Bored of having the same routine and want to have a healthy but hearty meal? For me paneer always saves the day. This is a very simple but super yummy kid approved fried rice recipe which can be made very quickly. I highly recommend making it with basmati rice because it is very aromatic.

I love making this as this is one dish my kids will eat at home or at school without complaining.

Paneer Fried Rice

      Ingredients

      For Rice

      • 1 Cup Basmati Rice
      • 2 Cups Water
      • Salt To taste

      Ingredients

      • 1 Tablespoon Ghee
      • 1 Tablespoon Oil
      • 1 Teaspoon Cumin seeds
      • 1 Teaspoon Ginger Garlic Paste
      • 1/2 Teaspoon Pepper powder
      • 1/2 Teaspoon Red chilli powder
      • 3 Tablespoons Soy Sauce
      • 1 Tablespoon Rice wine vinegar
      • Salt To taste
      • 1 Medium Chopped Onion
      • 2 Cups Cubed Paneer
      • 1 Cup Frozen Peas and Carrots

      For Garnish

      • 1 Tablespoon Cashews
      • 1/4 Teaspoon Ghee
      • A handful of finely chopped Spring Onions

      Method

      Preparing the rice

      • 1)

        Dry roast the basmati rice in a pan for 2 to 3 minutes until white in color

      • 2)

        Add water and salt

      • 3)

        Cover and cook on lowest flame for 15 minutes

      • 4)

        Switch off the stove, mix the rice and let it cool

      Method

      • 1)

        In a saucepan add oil, ghee and cumin seeds and saute for a minute

      • 2)

        Add the chopped onions and saute until it is transparent

      • 3)

        Add the ginger garlic paste and saute again for 2 minutes

      • 4)

        Add the chilli powder, pepper powder, and the cubed paneer

      • 5)

        Saute until the panner turns golden color

      • 6)

        Add soy sauce and the rice wine vinegar and mix until its evenly coated

      • 7)

        Taste it and add salt accordingly, since the soy sauce has salt in it too

      • 8)

        Add the cooked rice and mix gently

      For Garnish

      • 1)

        Add 1/2 teaspoon of ghee and saute the cashews until golden brown and add to the fried rice

      • 2)

        Add the chopped spring onions

      • 3)

        Fried rice is ready to be devoured

      Notes

      Soy sauce is typically high in salt content, so please add salt to the paneer accordingly.
