Pavakkai Thokku (Bitter gourd)

Bitter gourd is generally not something that everyone likes. One way to enjoy this bitter vegetable is to make it into a thokku. I usually have this thokku with idly or with hot rasam and rice. You can substitute any vegetable for bitter gourd and follow the same recipe.

Pavakkai Thokku (Bitter gourd)

      Ingredients

      • 2 Cut Bitter gourds
      • 1 Teaspoon Tamarind Paste
      • 1/2 Teaspoon Turmeric Powder
      • 1 Teaspoon Jaggery
      • 1 1/2 Teaspoon Red Chilli Powder
      • Salt To Taste

      For Tempering (Tadka)

      • 2 Tablespoons Cooking oil
      • 1 Slit Green Chilli
      • 1 Red Chilli
      • 1/2 Teaspoon Mustard seeds
      • A pinch of Asafetida
      • 3 to 4 Curry leaves

      Method

      Grinding

      • 1)

        Grind the cut bitter gourd  in a mixer/ blender and keep aside

      To make the thokku

      • 1)

        Take a saucepan and add the ‘for tempering’ ingredients

      • 2)

        When the mustard splutters add the ground mixture and saute for 8 minutes (or until the raw smell goes away)

      • 3)

        Add tamarind paste, chilli powder, turmeric powder, jaggery and salt and mix nicely for a couple of minutes

      • 4)

        Mix until it stops sticking in the pan.
